The White Truffle of the Colli Bolognesi has a real manufacturing excellence among the gastronomy of the Apennines and Savigno is certainly among the territories in which this vocation is stronger. This rare truffle (Tuber magnatum) comes to complete maturity from September to December, in poplar, white willows, or oak woods. It has a yellow ochre hue and an intense smell of garlic and grana cheese. The Finest White truffle of Savigno has a particularly strong and pleasant taste.
